My latest (and final!) effort at succeeding with weight loss is in full swing and has been for a whole two weeks.
And I'm bored with food already.
So that means I have to pull out the big guns when it comes to recipes...the ones that need a special category in my recipe box called "The Trifecta." That means they're cheap, easy, AND good. And Quad-fecta if I add Points-friendly, like the one I'm about to share.
This is a Weight Watchers stand-by for me. I don't really even know where it came from, only that I've had it for a long, long time. It never fails me and it's also a family pleaser, and it's versatile, too. The measurements are really just estimates; it's just not that important to be precise here.
Diet Coke Chicken
(serves 4)
Two large, bone-in chicken breasts (I use bone-in because I think 'dem bones have more flavor)
One 12 oz. can of Diet Coke
1/2 c. ketchup
1/2 c. barbecue sauce
1/2 small sliced onion
Whisk together Diet Coke, ketchup, and barbecue sauce. I have also added a couple of shakes of Liquid Smoke or some worchestershire sauce to deepen the flavor.
Take the skin off the chicken breasts and lay them in your slow cooker, and sprinkle them with salt and pepper. Lay the onions on top.
Pour the Diet Coke mixture over the top of the chicken. Put the lid on and cook on high for two hours and on low for three hours (but you know your slow cooker better than me...just cook these babies until they're at a safe temperature or no longer pink inside. Don't cook on high for eight hours, though...trust me on that).
When they're done, the meat will be falling off the bone. Shred it up a little and serve. Here are a few ideas:
-- As chicken sandwiches. Be sure to get a spoonful or two of the sauce that's left in the slow cooker.
-- Rolled up in a tortilla with some shredded colby jack cheese.
-- Eaten by itself with a generous side dish of vegetables.
